It’s raining again today.
Give me thunderstorms any day of the week.
Thunderstorms equal excitement and action, which I love,
but not this dreary drizzle, clouds hanging low in the sky.
It’s just plain depressing if you ask me.
Then to top it off, my daughter received her driver’s permit!
CLEAR THE ROADS!
Yes I’m excited for her but wow, I now feel OLD!
Wasn’t she just heading off to kindergarten and playing Barbies? Where does the time go?
So to curb my gloomy moodies, I went shopping!
The garden center was the destination.
Funky heirloom pumpkins, purple kale, and mums lightened my mood.
Even though it was nearly 80 degrees, it looked like autumn outside, which meant comfort food for dinner.
I put a roast in the oven and the house filled with the wonderful roasted aroma.
It turned out oh-so-delish!
Roast and mashed potatoes with gravy, rolls, and green beans hit the dinner plates and disappeared in a flash!
Even the 4 year old gobbled it up!
Love it when that happens.
The day is winding down now, and even though the raindrops keep falling, my family’s smiles cheer me up.

It’s a bottom round roast. I placed it in a roasting pan,rubbed it in olive oil, sprinkled 1 pack of onion soup mix over it along with some chopped garlic. Then I poured 1/2 of a can of COKE (yes coke) and 1/2cup of water over it all. Into the oven at 400 for 10 min. then turned it down to 300 for a little over an hour. It was a 5.5 lb roast. I took it out when it reached 140 degrees and let it sit for 20 min. I poured the juices from the pan in a small pot and thickened with cornstarch to make gravy. I eat it with horseradish sauce, but the kids love gravy. It was fab!!

Yummy! I’ll have to try your recipe! I am so not looking forward to my sons’ getting their driver’s licenses. Three teenage boys on our policy at one time. Ouch.
