Strawberry Crepes

Crepes were always a special breakfast in my family when I was a child. I’ve eaten them for as long as I can remember. My mom taught my sisters and I how to make them and I need to thank her for that because once you have learned how to make crepes, your family will be requesting them each weekend! I’ve experimented with a few recipes over the years, and I have found this one I’m sharing today, my favorite.

Strawberry Crepes by Sand & Sisal

Strawberry Crepes

2 eggs

1 cup all purpose flour

1/4 teaspoon salt

1 tablespoon sugar

1/2 cup water

1/2 cup milk

2 tablespoons of melted butter

Sliced strawberries

Powdered sugar

 

Instructions: 1) In a large bowl, beat the eggs well with a whisk. Whisk in the flour, sugar, and salt. Slowly add the milk and water a bit at a time, being sure to whisk out any lumps. Lastly, stir in the melted butter.

2) Heat a non-stick crepe pan over medium heat. Lightly spray with cooking spray. Using a 1/4 measuring cup, pour 1/4 cup of crepe batter into the hot pan. Pick up the pan and gently tilt and rotate it so that the batter covers the bottom of the pan evenly. Allow to cook until the edges of the crepe look dry and start to slightly curl. Flip the crepe over with a spatula and cook for about 20 – 30 seconds more. The crepe should be able to slide out of your pan onto a plate.

3) Place sliced strawberries down the center of the crepe, sprinkle with powdered sugar, roll up the crepe and serve with additional powdered sugar if desired. Feel free to add different fillings, like blueberries, bananas, Nutella, or raspberries and chocolate chips.

This recipes makes 8 crepes. I like to double it for my large family!

    You gotta love crepes, right? I use a very similar recipe, just instead of normal water I use sparking water.
